Cal Price

Snack or supper dish, to serve two or three at a pinch.

0.75lbs thinly sliced potatoes
0.5lbs thinly sliced onion
2oz can anchovy fillets
3oz butter
1.5oz fresh breadcrumbs (white works best with this dish)
5 fl oz whole milk (single cream is great or a combination-simple milk is fine but skimmed don't cut it)
2oz grated Cheddar or similar hard cheese.

preheat oven to 400f/200c/gas6.

Mix pots, onions anchovies and oil from can and turn into an oven dish pre-buttered using half the butter.

Melt the remaining butter (slowly) and turn in the breadcrumbs when well mixed and coated sprinkle over the potato mix.

Cover with foil and bake for about 35 mins then uncover and gently pour in the milk (into a corner or down one side works) Sprinkle the dish with the cheese and bake without covering for a further 20-30 mins till crumbs are golden brown.

This is real winter evening food from Sweden, to make it into a substantial meal top with fried eggs and bacon, crisp bacon works well.

If you are not over keen on anchovies use a few chicken livers sliced and a drop of cooking oil or a smoked streaky bacon. You can put a couple of rashers of bacon on top of the breadcrumbs for the last ten mins in the oven if you fancy.

Cal...........this sounds good. I love anchovies. My family does NOT. Are these the small, salty, briny anchovies that have hairlike cilia on them? That is what we get here in the,US. I've read that "real" anchovies are not prepped that way in foriegn countries and more a  "whole" fish and packed in olive oil, sometimes in jars. We make a dish similar to this using beef hotdogs (franks) or hot cajun sausage, potatoes, and onions. With a LOT of butter! :) Thanks, Wilson

Yes Wilson "your" salty/hairy type normally sold in a small flat can for this recipe.

I was going to post another "cheepie" recipe great for kids called "Cowboy hash" but it calls for canned baked beans and ours are very different to yours and also a can of Oxtail soup is involved, do you guys get Oxtail? can you get beans without the pork, either plain or in a tomato sauce like European style ones ? Be nice to know in case I post something (else?) that does not translate.

We most certainly have oxtail soup. Haven't had any in about 4 years but yes. As for the beans, yes, we have all types..........red, white, with or without pork, baked (boston baked), kidney beans,lima beans (green and white) ahd prob many more than I have mentioned.
Also have black-eyed peas, English peas (means green sweet peas),  tiny field peas and lentils..........whew........let me take a breath! :)

N-G-F-L, Oxtail soup is a brown meaty soup made using beef stock and the tail(s) from just about any Bovine creature, usually domestic cattle. You are not going to find those in the average supermarket but a propper butcher should be able to get them.

If I remember correctly it went on a banned list here in the eighties during the height of the BSE thing. I have a couple of recipies for making it but many people, and I might agree, now take the view that life is too short for skinning tails and simply buy a can instead. It used to be very popular here but has all but disapeared nowadays.

Right, this is Cowboy Hash which is little more than a tin-opener job, solid food, cheap and generally kids will eat it. Good for student catering too. This was a sipmle surefire winner when my kids were small.

Take about a pound of beef mince (ground beef) chopped onion and garlic to taste, fry it all in a big pan like you were going to make a Bolognaise sauce then simply add a can of Oxtail soup, can of baked beans (the white type in Tomato sauce works best) and a can of sweetcorn. Simmer till beef is cooked and serve with rice or potatoes or if you are feeling adventurous, inside a large Yorkshire pudding.

If you can't get Oxtail soup try to find a beefy soup (preferably without chunky veg) or use a can of Tomato soup plus a couple of beef stock cubes. However the texture of the Oxtail soup makes it worth looking for.

I used to make a vegetarian alternative version using soya-mince and a can of tomato soup instead of the meat items wich also works quite well, at least I had no complaints from the veggie in the family.

dammit cal now im hungry again, thanks alot  :flipoff: :flipoff: :laugh: :laugh: :laugh: :laugh: :laugh: btw cal or anyone else in the know, there was a dessert i used to make, it was russian origin i believe, it involved making a cake, and baking it inside of a coffee can, ive lost my recipes in a move a few years back, and cannot remember much of anyhting about it. cept for what ive stated above, anyhoo, any idea or clue as to what ive poorly described? :dunno_white:
