I notice I don't have a "slip-on" style exhaust can...
so I guess I will need to hacksaw off the stock can to put an aftermarket slip-on style.
is this right?  are there any how-tos?  Where exactly is the best place to cut?

Can you guys point me in the right direction for an awesome sounding, and awesome looking can?  I know there is no performance increase if the stock headers aren't replaced.  I'm not looking for more power anyway.

While I have the exhaust off, I'm going to try and paint it too.  I'll try to get all the rust off of it, and spray it down with some 1200* paint, or some header paint... we'll see...

Thanks for any help or suggestions!

Here is a page with a lot of the exhausts that people like to use http://cgi.stanford.edu/~sanjayd/gs500/Upgrades/Exhaust

There are other cans you can use, somebody correct me if I'm wrong, I think you can use just about any can you want.

As for cutting it depends on what exhaust you get, but here is a pic, http://www.gstwins.com/photogallery/displayimage.php?album=2&pos=95 cut here or further back if you need to.  You'll probably wan to have them welded together.  I just sanded and painted my exhaust a few days ago, talk about a dirty job.  I'll get some pics up here for you so you can see how it turned out.
