If I run my V&H headers to two cans do I need to use a x pipe or crossover or can they be isolated to each carb. one carb one cylinder and one can.

I believe the X Pipe will help with Scavenging and improve over all exhaust flow of the entire system, but I don't see why you cannot run 2 separate pipes all the way back.

A Dude over here , has a Custom Predator exhaust , and it is One carb one, exhaust , Looks good and works well according to him

ok  so I have no need to buy a Y pipe then good. off to the muffler shop.
