So I just did a bunch of taking apart and putting back together on my bike, thought I had it working right but I guess not quite. I took her out for a test ride and she rode real good until I went past half throttle then it kinda knocked and bogged and wouldn't go any faster until I dropped her back to half throttle. I could still go fast as long as I didn't go past half throttle. Any ideas on how to fix this, it's been about 3 weeks of working and I just wanna ride again.

You've given us symptoms but "taking apart and putting back together" can mean a lot of things.  Did you change the tires or did you put new piston rings on?

1) Empty your tank and refill with fresh gas
2) Clean your carbs

I don't know anything about anything.  Follow suggestions found on the internet at your own risk.

I ripped it right down to the pistons to check that out. Already took the carb off and cleaned it. I can try the fuel but the gas that's in it isn't very old.

did you take the carbs completely apart and clean out every jet and orifice? or did you just spray cleaner through the openings. sounds like a clogged main jet or malfunctioning slide.
