About to try to rebuild the carbs on the gs500e (sputters and dies when the bike is warm... Randomly loses rpms while riding and increasing throttle just prevents the engine from dieing) and wondering if i should buy a carb rebuild kit before i go ahead and rip into it?

That aint needing rebuild. leaks especially float gasket = need rebuild kit. The rest is all just O rings. You may just be dirty ...
