so I think I'm done.

Lunchbox + custom Akrapovic slippy
With 40/147.5 jets, 3.5 washers under the needle, (stock washer is thinner) and ?? turns out everything seems perfect.
Carbs synched. (they were way off)
she has power all through the throttle range, far more than is actually usable in town.

All that is left is slowly dialing in the idle mix, which is on the rich side right now.

This is exciting. I am excited.
