Call Chaparral at 1-800-841-2960.  They sell Sprocket Specialists sprockets.

Ask for Chaparral part number 474-XX where XX is the number of teeth you want.  This is a rear aluminum sprocket, listed for the GS500E.  You can get it with as few as 32 teeth or as many as 74 teeth.  (Double check me at http://www.sprocketspecialists.com/html/suzuki7.shtml.  It's the same info that's in the Chaparral catalog, except that Chaparral's prices are lower.)

Here is how the Chaparral pricing works, from their printed catalog:
    32-45 teeth: $34.96
    46-55 teeth: $41.96
    56-72 teeth: $57.96
73-74 teeth: $62.96[/list:u]I tried several part number lookups on the
Chaparral website.  It looks like you can order from 36 to 47 teeth online (part numbers 474-36 to 474-47).  Any other number of teeth will be a special order.

Good Luck!

PS - I should have mentioned the various extra-cost options that are available.  They're probably listed on that Sprocket Specialists page, but here are the Chaparral prices:
    $10 - Titan Tough Hardening
    $13 - Grooved Hot Slots
    $12 - Split Link Lock
$25 - Ultra Lite Lightening Holes[/list:u]EDIT: Fixed formatting of dollar amounts.

As far as the case guards go, see my first post in the "leg protection bars"? thread for some leads.
