I know what the E stands for, but I was wondering what the difference is as for as the motor goes?

Well, the newest models have 2hp more, so there are slight changes. But incremental, rather than revolutionary.
Apart from the sticker, how do you identify an E?

That was one of the intentions of the restyle. To "freshen" the sporty appearance. That and the one I posted has SM2s on it, a different exhaust, fender hack, and a few other minor things that enhance the sporty appearance.

K is the year designation (yours is a K1, mine is a K4). The model is still GS500 sans E.

I really loved the chin fairing, it set the bike off imo... but i never really cared much for the headlight fairing. I usually took it off in the summer and put in on in the winter, it did help knock some wind off your chest. Useful, but not as pretty as the naked look to me.
I took my headlight fairing off too, not long after getting the bike. I think it's pretty ugly. The only time I had it back on was for a week long trip when I wanted a little wind protection to slow fatigue. I wouldn't mind a chin fairing though, that would look good
