was wondering if they whould fit, does anyone know the diameter of the carbs whare the air box/ filters attach?  side question, it's 25.4mm in a inch right?

Wont fit... keihein's have a round mouth... Mikuni's have a oval... simply too small... FZR 1000 ones will fit the GS AFAIK ....

I am sorry but every Mikuni carb for a motorcycle that I have seen has had a round mouth.

But to your question as to being able to fit the answer is no if you want a proper fit.  The stock carbs for the EX500 have a outside daimeter of 54mm or 2.125in while the stock GS500E carbs require a 60mm or 2.375in inside diameter on a filter for a proper fit.
