edit - Although the stalk makes me think snail or slug.

It is an eye, but you got to get the right animal (or at least close)

It looks like a fly or other bug (insect).

Humans have a measly 3 classes of visual pigments for color detection (fewer in color blind folks)

Is fish close to sea shrimp?

Actually you don't want to get to close these guys. They are the best "punchers" in the animal kingdom. They can punch out aquarium glass when they are pissed off.
