A rather tastey non-bike related post...

You may call this dish "Mak's Chicken".  My own variation of General Tsao's Chicken, a little less complex.

What you need (in no particular order):

2lbs chicken breast, cubed, bitesize
1/4 cup corn (amount WILL vary)
White pepper or black pepper
Garlic, minced (you can use powder if you must, McCormick's garlic pepper blend is also an excellent substitute)
Ginger root (you can use powder if you must...really no different in taste)
1/2 cup Soy Sauce (kikoman, obviously)
1/2 cup Teriyaki Suace
1 14oz can swansons lowfat chicken broth
1/4 cup sugar
1/4 cup white vinegar
Hand full arbol dried peppers
1 large egg
1/4 cup vegie oil (plus enough to fry chicken)

You'll need a 30oz bowl, a wisk, a large plastic bowl with a lid (country crock tubs work great) a large mixing bowl, a large wok or deep pan (1 gallon pot will work), a smaller skillet, a measuring cup and a good bar-b-que fork (plastic).

The most tedious portion of this is battering and frying the chicken.  You can either deep fry or pan fry the chicken...I prefer to pan fry.  Whichever route, go ahead and get the grease to going.  Now take and put some carn starch into the countr crock tub, about an inch in the bottom.  Then crack the egg into the smaller bowl and wisk.  Take each individual chicken piece and dip into the egg and then toss into the corn starch.  Do two or three and then put the lid on and shake.  Then set the pieces asside to go into the frier/skillet when you have more time to supervise them.  You may have to add more corn starch.

After you've got all the chicken pieces battered, turn to your frier.  If you're deep frying just chuck them in a cook.  Cook 4~6 pieces at a time and leave them in the grease until they begin to float.  If you're pan frying toss your peppers in first and let them simmer for a moment or two.  Then, if the skillet is large enough, add all the chicken to it and spread evenly.  Cook until brown, turning occasionally, with the peppers, then remove heat.

The interesting thing about my recipe, and General Tsao's Chicken, is the sauce.  Mine's a bit different and little spicier, but prepared in much the same way.  The the vinegar, soy sauce, teriyaki sauce, chicken broth, ginger (minced finely, 1tsp, or a few shakes of powder), 1tsp garlic, 1 tsp white pepper, 1/4 cup sugar and 1~2 tbsp of corn starch to the large mixing bowl and...well...mix.  Get all the sugar and starch disolved, it'll take a moment and the sauce will still be pretty thin.

Once sauce is mixed poor into large wok/deep skillet/pot and then add the chicken, peppers, and oil if pan fried (peppers should be pan fried in at least 2 oz of veggie oil if chicken is deep fried) and set over medium heat stirring constantly.  It will not take long for the sauce to thicken up and once it's an even texture remove from heat.

That's it.

Served with steamed rice (don't ruin this dish with no fried rice nonsense) and fresh cut green veggies (celery and broccolli specifically).  Serves two (of me).
