I've got WAY too many knifes... but when your an semi-ultralight backpacker, it pays to have a selection for trips.  My favorite two are a Cold Steel folder and I also have a Sog that is the sharpest dang knife i've ever seen.  But I tend to carry spyderco's and other cheaper knifes more because i'm afraid of loosing my favorites.

Oh-o, I will not engage in the rights and wrongs debate.

I have a folding - locking knife in each of my toolkits. Opinel No 8. Every French peasant carries one for cheese and baggettes. Cheap as chips, about five bucks in France or about seven and a bit in UK. Light as a feather, beechwood, locks by rotating collar the basic cheap version is not stainless steel so you can get a really good edge on it if required. Also available as de-lux, bit heavier and stainless.

Oil it with a light vegatable oil and you can shake it out and lock it with one hand.

In Cricket the testicular guard, or Box, was introduced in 1874. The helmet was introduced in 1974. Is there a message??

I gotta try this...  It's annoying to use both hands to open the knife, especially when I'm doing work.

I friggen love my Spyderco knife...  I've had it for about five years and finally abused it enough to break the tip off...  And that was after a lot of abuse.

Half serrated, folding, pocket clip...

Similar to this one...  My handle and clip are a little different and mine is AUS-8 steel instead of VG-10.

Butterfly knives are illegal in the state of Texas. They're classified as switchblades.

I went to a cheap-o hardware store here in Plainview and got a cheap-o Maxam knife to tide me over until I got a decent one. It cost me $9 so it wasn't like I was breaking the bank.

One more thing I should mention is that I want something that conceals very nicely. I don't want a lot of the knife body sticking up from my pocket. The top of the clip should be even with the top of the knife (or bottom, depending on orientation).

I'm also beginning to consider fixed blade knives, so long as the blade length is under 5.5". There is a really nice Gerber fixed blade I found, but the blade is over 6" long, which is illegal in Texas.

EDIT:
Been looking around at some fixed blades and found this one, the Benchmade Nimravus. It seems to be my ideal knife, too. 4.5" blade length, tanto edge, partially serrated, sleek and stylish, high quality construction. I found some on eBay for about $100, so it isn't too bad of a price range difference.

I'm curious what the requirements are for chefs to transport their work knives.  Most folks I know without knife rolls or cases usually just carry them around rolled in either a towel or their jacket...would that be illegal in TX?  Would one need a locking case if you're toting around a 12" chef's knife?

I think carrying a knife to and from a place of work is alright, so long as you can prove that you use the knife for your job. I know that when I bought my throwing knives I was warned that they were illegal to carry, but not to own. Had I been pulled over on the way home and the officer seen the knives I would have had to inform him that I was transporting them from the place of purchase to my residence, which is allowed.

Benchmade makes outstanding folders.  I've had an AFCK for about 10 years and have never had any problems with it.  They can be kinda pricey, but if you want a knife that'll go the distance, can't go wrong with them.  Cold Steel makes some gret folders.  I've had one of the Voyagers for a while.  You can't break the things.  They have a video called "Proof" that shows them subjecting their knives to torture tests.  Kinda gets repetitive, but cool for a while.  I was given a Microtech by a guy at my church just before I got deployed.  I'd never heard of them, so I looked it up on the internet - it was a $400 automatic knife.  Couldn't believe it.  My first car didn't cost that much.

I think I'm gonna keep this cheap-o folder I've got now and get the Benchmade fixed blade after I sell some parts (subsequently increasing the cash I have on hand). I do some nasty things to my folding knives, as they are definitely my workhorse knives. The fixed blade will be a nice addition when I need the extra heavy duty sturdiness.
