can anyone explain what in modification terms what a stage 1 kit is and what a stage 2 kit is and a stage 3 kit is?

In short, they improve fuel to air mixture. Progressively Stage I, II, III. I is better, II is much better, III is best. This mean more power.

when you upgrade or change the fuel/air mix by adding free flowing air filter or an exhaust, etc. you need to adjust the fuel delivery to match the added air-by changing the jets in the carbs. The various stages refer to different levels of change elsewhere (like a stage I would be for air filter change)...
