how much  would i have to go through to trade in my bike for something bigger ... and what happens with the loan i got for the gs and all that?

Ok matty what were you looking at a gixxer???  your biggest problem will be the insane insurance you will have to pay since YOU ARE ONLY 16.  Pay off your GS , get some riding experience, and then think about a bigger bike.... insurance goes down with age.  If your still not happy with the gs there are plenty of performance related mods you can do to make your bike a little more acceptable.

Just like a car, if you trade in your GS the difference that you owe and what the dealler offered you would be added on to the price of the new bike, so basically you would be paying off the new bike plus what the difference on the GS is. example because it's late and I'm not explaining it very well

GS Loan lets say you have 4000 left. . new bike is 10000, dealer offers you 2500 for your GS your new loan would be 10000 ( new bike ) + 1500 ( left on GS loan ) = 11500.

This is not something anyone should do, you will get majorly screwed and paying out the a$$.  If you really want to trade up then you would have to do something like this.

Get a new loan ( signature type loan or a loan that does not involve putting up the GS ) pay off the GS with the new loan money.  Sell the GS, money you get from the GS should be applied to the new loan ( hopefully paying it off ).  Then buying your new bike.  Again sort of risky chances are you will not be able to sell the GS for what you still owe.  So if you got a new bike then you will have two loans to pay back.

How do you plan on paying about ummmm 6000 in insurance on a new gixxer???  Do you have a job???

Mak is getting ready to make some pretty cool carbon fiber slip ons for like $155 or search using the terms exhaust or nick_villian and that should give you plenty of results.
