I have a 91 gs500e, the exhaust is gettin pretty rusty and before I go to the trouble of sandblasting it, I would like to explore the possibility of switching up the whole system. Are there dual exhaust systems for this bike?

get an EX500 exhaust and buy some sarachus or something.
