Need help "engine nose and low power"

OK on my daily ride to work I travel up a mountian about 30 miles on a vary curvy road On the way down thier is a lot of traffice so I've got to compresion brake most the way down. I'm not sure if it runs hotter or what but when I start to hit flat land and run about 40+ it makes a humming niose that changes tone up and down wail remaining the same speed. Is this normal?

Also when I get down the mountian I notice 4000-6500 range to be sluggish almost sputtering when given a small amount of throttle. what is this?

for my finall question of the day how loud are the valves normally? The bike sounds like a beefed up sewing machine.

If it's ticking loudly, then you do need to check the valves.  There is only a little valve noise on a properly adjusted engine.
