1993 GS500E: Stock airfilter, stock exhaust, mixture screw 2,75 turns out, needle: needleclip 1 position higher than standard (~ 1 mm) , pilot jet:40, main jet: 125.

The jetting is exactly right at sea-level. Plugs are nice brown color.
Jetting gets definitely rich when in the mountains. (1 km above sea-level)  Idle drops 300 rpm,  bike gets noticably slower. Luckily Holland is all flat, so always optimum mixture :)

Top speed: 185 km/h (flat on the tank, helmet almost resting on tach :P)

I got my 40s in this weekend. I will be installing them tonight, and after  I will let everyone know my results.

I have had a couple different set-ups on a 2001.

Stock air filter and stock exhaust -  two washers 3+ turns on mixture screws and 135 mains - started a little better, more power but still took forever to warm up and popped and bucked while warming up.

K&N Pods, stock exhaust - #20 pilots, 3 turns, two washers, 142.5 mains - much better warm up and power.

K&N Pods, Cobra F1R - # 20 pilots, 3 turns, 1 washer, 150 mains - also tried 152.5 but was running rich on very hot days.

Starts without the choke in warm weather (70 degrees F and up) indicating that it may be a bit rich down low.  When it is cold enough to need the choke - warm up, to where it will pull without hesitation with the choke off, is about 15 - 30 seconds unless the temperature is below 40 degrees F -  then it may take a block or two.  Below freezing (like it was here this morning) I take the car.

Never touched the "mid-main"

I'm running Vance & Hines exhaust, 150 mains, 40 pilots and K&N pod filters with the mixture screws at 3 turns out.  I think the idle is a little lean, so I'll try turning the mixture screws out a little more.  I haven't checked the plugs yet but the bike accelerates strongly through the rpms with no bogs or hesitations.

I put this on another post but will repeat it here to keep it all together.
2001, 27 000 km, running 91 octane, Uni in the box, Performance pipe (stock header diameter, 53.5mm collector and muffler inlet, less restrictive but still legal muffler), V&H advancer.
22.5 Pilots, screws 2 1/2 turns.  Needles FactoryPro Stage 1 with clips on second top slot.  127.5 mains.
Fuel consumption about the same as stock.  Maybe slightly rich (based on colour of muffler outlet only) but not bad.
