What's the difference and which ones do I want???

Sintered pads have better initial bite, and less fade. However, they are slightly less friendly to the discs.
Organics are easier on the discs with less initial bite, and might be a better choice on the rear to avoid rear wheel lock-up.

FYI, the factory front pads on my 2006 were Sintered HH Pads. When they were worn, I went with EBC HH Sintered. They are much better than the Suzuki OE pads.

+1 on EBC HH.

Um, maybe a good idea to put the organic on the back. Rear wheel always locks up in a bad situation.

Agree

I have just purchased some EBC HH Sintered front (for powerful braking) and EBC Organic Pads for my rear (to minimise the chance of rear lock ups)

Anyone have a part number for the front EBC HH Sintered for a 9 GS500E?

I assume you mean '99? According to the following thread, the part number is FA231HH for 1996+
