My bike is brand new.  Just under 1000 safe miles on her now and I'm starting to realize the bike can be a pain in traffic.  It's like there is no midrange on the bike, acceleration from 15-50 is either REALLY slow or REALLY fast if I give it WOT in 2nd.  No inbetween.  Its like the torque curve goes up linearly from 1300-4000 then plunges exponentially and goes up again exponentially to 9500.  lol.  From what I understand this is a jetting issue?  Is this just how the GS is in general?  It really doesn't seem like it should be like this, I know it's no GSXR but it doesn't seem to be running right.  Is jetting covered under the 1 year warranty or do I need to get to wrenching?

Maybe ... in fact I dont see what else it can be.
However it also will not be warranteeable. And you rejet and they may threaten you with voiding the warranty. That is atleast one reason why I dont buy from stealers.
Cool.

Talk to your dealer first and let them ride it to see for themselves. There could be something wrong in the carbs... jets loose, slides sticking, etc. The bike will run smooth if adjusted correctly.
Common sense in not very common.
