A friend of mine flipped his R6 once when he was taking off.  I was just wondering, how careful I need to be with my GS to avoid this.

Don't try and take it off any ramps.

Don't strap rockets to it.

Don't change the stock gearing down.

Don't be stupid.

12 tooth sprocket and a 100lb anvil hanging 3 feet off the back of the seat?

rev it up to 9k rpm and pop the clutch. you'll go right up - I guarantee it.  I know first hand unfortunately.

Yeah, but would it just wheelie a bit until you let off the gas or would it actually flip upside down?

Mine's geared down quite a bit, and completely dumping the clutch brings it up pretty high, but never high enough that it almost flipped. I think you'll be pretty safe. If you're going out just trying to do wheelies there's always a chance, but otherwise, you've got a 1% chance of the thing just flipping over.

you would have to be a complete moron to flip a GS over unless you were trying to do 12 o clock wheelies.

Agreed, you can flip a 10 speed Schwinn if you try but it requires some effort.

that's kinda what I thought.   Now is that just for the GS, are other bikes like an r6 easier to flip.  This friends was known to be a little moronic at times.

High horsepower + fairly short wheelbase = easier to flip.

An R6 would be very easy to flip, relatively speaking.  Get on YouTube, search for "flip motorcycle".  I'm sure there will be plenty of entertaining vids for you.

Yeah, anything anywhere close to 100hp like an r6 is ridiculously easy to flip if you don't know what you're doing. The GS takes a bit of work. A 10 speed though, isn't very hard to flip backwards.
