Welcome to the forum.  I think the GS is a great touring bike.  Two up shouldn't be a problem.  I suggest padded bike shorts under your pants.  The stock seat starts to get to me after about an hour and a half without the extra padding.

Those look like fun roads. Was almost tempted to ride down to tassie over christmas while i was visiting my parents and tour about a bit.

The GS will be okay on your tour. It will be able to do the same speeds you have already been doing solo - it will just take Longer to get to those speeds. And depending where in the rev range you already change, you will need to hold each gear a little longer to avoid lugging.
