Some Problems/questions odd things to me.

Alright, so my engine has been getting very hot lately, idk maybe because its been kinda cooler weather and my hands are already cold and when I touch the engine it feels hotter than normal. Just wanna make sure this isn't anything bad. Aswell, I added oil to my engine about less then 1200miles ago. and it was almost all burnt out. haven't been riding hard. barely any highway time because.. When I enter 6th gear. My as soon as I let off the freaking gas, the bike slows down to like 6k RPM than just dies.. shuts off. will not start up till I put it on PRI and sit for about 2 mins or so. Why is that? Also is the little red light on the dash of the GS500f is that Oil is low? Or oil temp is to high?

I do need to change my oil filter. could the hot engine be due to this? I don't see how it could but I'm new to this.

The red light is low oil pressure. If that's coming on WHILE the engine is running...you're in trouble. If you're saying your oil filter is old (how old?) what might be happening is it's beginning to come apart and pieces of the filter are getting clogged in the passages. If this is happening...well...

As far as dying, uh, the only thing I can think of is the engine is getting SO HOT from lack of oil that the carbs are overheating and the gas is boiling out of them. The 2 minute thing may just be a coincidence caused by it being allowed to cool off. My KLR650 would do that on really really hot days sometimes - you could tell because you could see the bubbles in the clear fuel line.

This is all purely speculation, however, and you really need to post some more info for us.

I am only a noob home wrentcher, but here is my $.02. The red oil light on the front is an oil pressure warning light. If this is on while you are riding, bad things are most likely happening. The oil moving through your engine is also a great part of the cooling of the internal components as well as your lubricant. If your engine is hotter than normal, and your oil pressure light is on I would wager something is wrong with the integrity of your oil flow in the engine. Again I am not a mechanic by any stretch, but I would not ride this bike again until it is fixed. An engine seizure at a speed where 6th gear is warranted could ruin your day or kill you.

The oil filter as far as I know what changed about 5k miles ago. but he said the o-ring needed to be replaced, haven't opened it yet because I haven't fully changed the oil yet either.. just been adding cause PO had put new stuff in, and it hasn't been that long ive had the bike. I just pm'd adidas with some stuff I needed

Also My Oil Light IS NOT on while riding, I was just curious what it means, I thought it was oil temp is to high.. silly me. but no it isn't on while riding, Also.. I can do highway speeds in 5th gear on my bike, just fine, AS soon as I hit 6th gear it does that problem where it dies.. Only happens in 6th. nothing else.. ?

Also the 6th gear thing, IF I hold it to long, it chugs like its screaming for gas.. I had carb problems before I fixed them a little, same chugging like its, FEED ME I'M HUNGRY. Normally if I pop in 6th I just get to the right lane as fast I can, and clutch in, let it die. sit for 2 mins.. I have a feeling its not the engine getting hot, its the carbs. Again, PM'd  adidas for upgrades/repairs.

OK, Glad to hear that this is not the issue, but lets review. Your carb is set up to deliver fuel to your engine in 3 states. Idle, medium throttle, and full on throttle. If your bike accelerates and runs normally in all gears and through usable RPMs except 6th gear, This does necessarily not sound like a carb problem to me.

Next time it dies, try putting it in the prime setting and see if it starts.  If it doesn't, open your gas cap and then see if it starts.  If the prime helped it is a frame petcock problem, if the tank opening helpd it is the breather in the cap.  Does it run normally in 6th gear on the center stand?

well, I have done this, with the prime, and it runs the same. but the gas cap I have not, I do not have a center stand, CRAP forgot to let adidas know that ^_^. But I didn't think it was a carb problem 100% but I suspected it. Also I think my Full throttle setting on my carb as 895 stated, also still has a problem delivering full fuel. needed for full combustion. Could be the problem too.. I think my clutch disc are not timed properly. if so I'm screwed cause I have no idea how i'd do that...

Not sure what you mean by "clutch timing."  If you are referring to the plates it just alternates between friction and steels with frictions on both outsides.

Yeah sorry, not very good at describing things. and limited to names of things I know.. I understand how they work, just not so keen on the physical names of things.. but yeah clutch timing, cause why would this only happen in 6th gear? Makes no sense.

I'll look for a center stand. Just sold one. I may have another extra. As I dig today, I find things I forgot about - like a new instrument cluster!?!?! (had bought that for Phenix)

If starving for fuel,
1. FILL IT UP - low gas? Bad gas?
2. Try running in PRIME. They bypasses the vacuum petcock. If OK, then check vacuum like to it and look for pinched hoses
3. Try with qas cap lose. There is a tiny air vent to let air in as gas goes out. That could be dirty if it runs with cap open or lose.
4. Fuel filter? That could be blocking fuel flow if you have one.
5. Look for pinches in fuel lines from gas tank.

Thinking more about this it seems strange that it only happens in 6th gear.  Are you sure it won't do it if you ride in 5th??  If it is a fuel issue I would expect it to be worse in 5th gear at the same given speed since the engine is spinning faster (using more fuel).
