I'm trying to do a street fighter/cafe racer look on my gs and one thing i want to do is replace the handlebars... how do I remove them?

1989 had clip-on style and are a bit different.  But for the other years, the handlebars are held on by a clamp in the middle.  Carefully pry off the plastic screw caps (if yours have them) and then use allen sockets to remove.  That's how my 2009 is configured.  Others are very similar.  From there, it's removing things like choke, brakes, etc. which each have their own bolts/clamps.
