Close. I'd like a more specific description of what it does or the correct name for it.

was it used to start ( or perhaps stop two motors on a mid 70's hammond organ?)

The switch to turn on the electric bellows for a pipe organ?

While it is a switch used on a pipe organ, not correct.
Hint: there are more than one of these.

jdoorn14

Is it a stop, or more precisely, the switch that turns on/off the stop?

Correct. There is a plastic stop tab fastened to it. It turns a stop on or off or a tremolo or percussion or most anything else.
The two small square magnets actually operate like a spring to keep it "up" or "down". Pols facing each other repel so it works like a spring - clever. The two coils are operated by the preset system ("combination action") and flip the tab up or down when a preset button is pressed.
There are other types of stop tab switches. Some old ones are pneumatic. Some have no preset capability and are just a switch to turn the organ stop on or off.

this a closeup of your organ adidas?, if so i am envious. if not, i am envious of whom it belongs to. ( love pipe organs btw lol  )
