Adding power... hard to get much for your money beyond air cleaner, exhaust, and re- jet (AKA stage one)

The GS500 has a higher RPM powerband. Not much happening until 4-5K RPM. It doesn't really get going until  the 7K-9k RPM band... that's where it's power is.... you have to rev the bikes up if you want it to go.

Before anything, get the bike running right . It not should have a hesitation.

Tell us more about the hesitation, what RPM? What gear are you in?  What speed ?

Of course the clutch can be adjusted... the quickest thing to check is that you have some free play at the lever.

Moar power? TURBO!

Or more reasonably, you can get a couple HP doing full exhaust + K&N + proper jetting but expect to spend like $150 per horsepower. Also, shorter gearing can make it feel quicker off the line. -1 front sprocket or +3 rear is a good start.
